For a clear peach simple syrup: leave the peaches to simmer for between 10-15 minutes, only gently stirring occasionally, until they begin to break down, and the mixture has reduced and thickened.

Then, in a large pitcher, combine the lemon juice, peach mixture (there should be around 1 cup), and 3 cups of water/sparkling water, and stir. The peaches you select should not be firm (a sign of under-ripe fruit) but should gently give if you squeeze slightly. While you are making the syrup, you can decide how thick you like it – keep on simmering longer for thicker, or less time for more liquidy syrup.Green tea: make a delicious peach green tea lemonade (like a Starbucks copycat recipe) by swapping out the water added to the syrup and lemon juice for brewed green tea instead. Bright, sweet, and tangy, it packs a punch of fresh peach flavor and blends easily into anything it touches. Out of the main peach season, you may still find several delicious varieties OR turn to frozen peaches.

Press gently: if you exert too much pressure on the peach quarters, they may become damaged and turn the syrup cloudy.
