Finish: Medium length on rubber, raisins, and a hint of coal smoke. Water slightly lengthens the finish, keeping the rubber and adding some malt and muesli. Finish: Medium in length (you might initially have thought it to be quite long, but without water, much of that would have been your taste buds shuddering at the cask strength) with a very nice level of astringency. This is a complex and elegant whisky. Sweet dried fruit, vanilla cream, cinnamon, baking spices and a drying oak all dance together. The flavors and smells are rich and warm, owing to the high strength. Its flavor profile is best suited to a cold winter night. Being Jewish i cannot confirm whether it tastes like christmas but many people say it does.

In the mouth: Comparatively young tasting, with the most overt wood influence of the trio. There’s a hint of turmeric before the middle of the palate is dominated again by the smoky caramelized sugar flavor of campfire marshmallows. This transitions to the finish, which lingers moderately with some spicy wood accents, but is the least pronounced of the three. Conclusion A little water and a second sip; you can calm your own senses down and not fear of the punch in the face from this dram. Like the nose, it’s quieter with a touch of water and a bit more rounded. Less of that alcohol blast. It’s sweet, but I can’t seem to get past or shake the youthful element of this whisky. Not a lot more to add to the taste when water is added. Conclusions:

Glenfarclas describe their whisky as ‘Single Highland Malt Scotch Whisky’ which might confuse some when they learn that the distillery is actually located in Ballindalloch in Speyside – traditionally the Highland region embraced what is now delineated as Speyside and, deep-down, Glenfarclas is still a very traditional distillery. These old time values still have some modern day benefit for whisky lovers - Glenfarclas bottings present unfussy low-key branding which eschew the current trend for marketing-driven label twaddle. Recent Tastings

All of these are so much more layered, textured, and variegated than anything coming out of Macallan these days. Each one is an overachiever for the age and price, with the 21 year old being the best value for money among the three. They’re sherried, but not sherry bombs given the relatively low bottling strength. The subtlety works in their favor, allowing some novel nuances to come to the fore.

Taste: Neat, less welcoming and perhaps even heavier than the restrained nose. An oily mouthfeel brings rubber - some of it burnt - along with tyres, spirit sulphur and a few raisins. Water makes a huge difference here as well, adding some silkiness to the mouthfeel and turning the taste maltier with some coal smoke and flint stone along with the burnt brown toast and plums from the neat nose. Fruity, nutty, sherried profile. What’s not to like about this? Some might say the proof (120), but that’s easily fixed with a splash of water if it’s too much. Others might say the price, but then all whisky is expensive these days, and it’s only getting more so. So I ask again… what’s not to like? Whiskybase B.V. Some cask strength whiskies, some not. A mixture of different sherry cask maturations from Pedro Ximénez, Oloroso, Palo Cortado, Fino… the list is quite varied.
