About this deal

I’m not sure what I did wrong but mine didn’t fully set. It has been nearly 24 hours in a silicone mold. Very pretty and nice flavor but need to be spooned out of the mood. Did I not use enough pectin or will they continue to set if I let them continue to dry out some? Bonelle, are soft jellies with fruit flavors: Orange, Strawberry, Lemon and Cherry; 100% vegan, made with only fruit pectin and without gelatin of animal origin. They are produced and guaranteed by FIDA.

Preheat the oven to 200 degrees F. Line a baking sheet with foil. Spread the applesauce in a very thin layer on a baking sheet, and place it in the oven for 30 minutes to remove the moisture. I have made these for the last 3 years and have never had the problems mentioned here. I coat them twice with regular granulated sugar. The first coating does tend to get a little weepy but the second "fixes" that. my husbands family is Cuban and they LOVE these jellies made with Goya or Lafe puree. I have given them as gifts and everyone seems to like them. The word Sülze (southern Sulz) properly refers to food in aspic, but may also be used loosely for the latter specifically. While I often create recipes for truffles and candied orange peel, I don’t think I’ve prepared gelées since originally publishing this recipe!Since I had leftover puree from this recent passion fruit sorbetrecipe, it seemed like a good time to re-familiarize myself with the process. When you hear "gelatin desserts," you likely think of super shiny, brightly colored, jiggly concoctions from the mid-20th century. There's definitely a retro feel to these whimsical desserts, the ones that hold their shape long after they're turned out of sculptural molds, like the Cranberry-Cherry Mold that's pictured here, but there's far more to them than just that.

Recipe Notes

Add jam and boil until smooth, about 2 minutes. Remove from heat; whisk in gelatin until dissolved. Pour through fine mesh strainer into parchment paper–lined 9-inch (2.5 L) square cake pan; skim off foam. Refrigerate until firm, about 4 hours. I made these in the past and loved them. Didn't have much trouble with the "weeping" of the candy. This year I'm trying out a Pate de Fruit recipe I found. Just wanted to share that I found there that to prevent (or delay) weeping, they toss them in some Everclear. Here's the recipe: http://www.chefsteps.com/activities/pate-de-fruit (also: as it uses pectin instead of gelatin, the recipe is vegetarian friendly)

I couldn't find passionfruit puree either. So I made my own strawberry puree. The flavor came out good, but the texture is too lose for me...I thought they'd be more gummy drop type instead of jello. They do indeed "weep" after being sugared. I had no problem unmolding and cutting them, I used a silicone 8 inch square pan which probably helped. I don't see how these can keep though. Definitely not in the frig as those ended up in a puddle. On the counter before being sugared, perhaps. I've got some in individual candy papers post-sugaring, hopefully they will last a day until they are gifted. In saucepan, bring remaining juice with 1-1/4 cups of the sugar to boil; reduce heat and simmer, stirring, until sugar is dissolved, 5 minutes. This dessert was stunning!!! I made it for my parents' anniversary dinner and my mother said that she could have believed that it had come from one of the best restaurants in Seattle. I did have some trouble getting the gelee to set up enough and my cream set too much, so the end product didn't look picture perfect, but it still tasted fabulous. This is absolutely my new favorite dessert and I recommend it to any and everyone!
