Icing Sugar – these truffles are pretty dark and rich, so I add a little icing sugar to take the edge off all that richness. Divinely decadent and fudgy! BIG hit with all with whom I gifted them too, including my own fam who the what was leftover. Thanks for sharing! (I used the cake recipe included in the directions.) Yes, you can use any type of alcohol that you like. Just keep in mind that different types of alcohol will give the truffles different flavors. If you want to, you can also leave out the rum if you are making these with children or use rum essence (you’ll need about one teaspoon, depending on the strength of your essence). The rum can be swapped for any other alcohol, but flavour wise rum seems to work well with chocolate. I added ALOT more rum and condensed milk to try to make them more fudgy and put them in the freezer to see if that would help … it didn’t. When you’re melting the chocolate and cream together, don’t allow it to become too hot or it could separate. Keep the heat as low as possible and don’t to try rush it. Make sure the cake is completely cooled before crumbling it, or the mixture might become too moist. Place the cake sponge in a bowl and crumble the cake either by rubbing with your hands (it’s best to use catering food gloves for this) or using a food processor. You can easily swap a normal sponge cake for a gluten-free one to create truffles suitable for people with gluten sensitivity. You can also use a chocolate cake instead of Madeira cake for extra chocolate taste. The easiest decoration is just drizzling melted chocolate on top of each rum truffle ball. You can use dark chocolate or white chocolate in its natural state or colored white chocolate. The cream doesn’t need to boil, it just needs to be warm enough to melt the chocolate, so if you melt them together, you’ll save time. Variation on this recipe You will need quite a lot of chocolate vermicelli to coat the truffles – I used a whole 70g tub.
