We have a painting showing whisky production from 1791, but there is no evidence of a licensed distillery here at that time – and it’s clear from the painting that they had already been producing uisge beatha for some time. The water is combined with malted barley and double distilled in copper pot stills, before two thirds is filled in Spanish Sherry oak casks. The remaining liquid is poured into normal oak casks. Nose: if you’ve tried Glenfarclas from the 1970s (especially refill wood) then this will be familiar. Stewed plums and nectarines, as well as waxed oranges, pink grapefruits and hints of pollen.
