It’s only in the last decade that it’s exploded, with a lot of distilleries in Tasmania and spreading from there with a good batch of really passionate, wonderful people." While lesser men brush it off as a less complex spirit, gin deserves our full attention and there are the serious complexities and depth behind some of the best Australian gins. Blending the signature flavour of juniper berries with unique local botanical notes from each distiller’s region, the variations in these ingredients create a huge range of gins with very different profiles. So there’s plenty to keep you hooked on the local gin scene, whether the distiller has focused on using something like lemon myrtle, fresh green apple, Shiraz grapes river mint, blood orange, finger lime or even fresh ginger.

This unique spirit has been beautifully crafted to capture the essence of a classic London Gin. It has strong juniper and citrus flavours without the alcohol content. Ginache is the spirit of the wine country. It has a deep ruby hue and boasts notes of raspberry, cinnamon and candied peel.

It also has colour changing abilities thanks to our old-friend butterfly pea flower, which when mixed with lemon, lime or tonic transforms from blue to a rich violet. Since pouring onto the scene nearly a decade ago, the Healesville-based distillery has become one of world’s leading gin producers – even being declared as such at the International Wine Spirits Competition, in London, in 2019. The brand’s ori-gin-al baby, the Four Pillars Rare Dry Gin, consistently ranks among the world’s best, having won gold, double gold and even Master medals at a plethora of industry competitions since it was first produced in 2014. Gin is then infused with juniper berries (the main flavor mostly associated with the spirit) as well as other ingredients like orris root, Angelica root, licorice, coriander, lavender, orange peel, and countless other potential fruits, herbs, and botanicals. Where is Gin Made? In the most basic sense, gin is a neutral grain distilled spirit that is infused with juniper berries and various other herbs and botanicals, based on the individual recipe. Most pink gins I’ve tried either cloying or taste so artificial that it was hard for me to discern whether it really was gin. So, in conclusion, I’m not a fan. You’ll find Ambleside Distillers on the road to Hahndorf. They have a gorgeous tasting bar serving drinks and food platters. This South Australia distillery is fast become one of the county’s gin darlings. Never Never Distilling Co started four years ago as a passion project between mates and the McLaren Vale-based brand is now producing some of the country’s best gins. Their Triple Juniper Gin was awarded World's Best London Dry Gin at the 2022 World Gin Awards, while distiller Tim Boast was awarded Master Distiller of the Year. They offer tours and tastings, but you must book online. For the health conscious (hehehe), you can join their Gin Yoga class every Sunday!
