About this deal

Using an stand mixer with a dough hook attachment takes the work out of kneading this bread. However, if you don’t have an stand mixer this dough can be kneaded by hand quite easily. Storage Semolina flour is the gritty, coarse particles of durum wheat that are milled down after extracting finer flour. It is used to make couscous, upma, idli, knafeh, and countless other porridge and dessert recipes around the globe.

All Purpose Flour: If you do not have semolina, and only have all purpose flour, then you can absolutely still complete your recipe, but your results, while delicious, may just turn out slightly less-than-perfect in texture. The higher protein content the better when substituting for semolina. Semolina has about 13% or more protein content, as compared to all purpose flour with around 8-11%.In e.g. Austria, Germany, Hungary, Bulgaria, Bosnia-Herzegovina, Slovenia, Serbia, Romania, Croatia, Slovakia and the Czech Republic common wheat semolina (the correct name is Weichweizengrieß in German, but usually it is just called Grieß) is cooked with milk and sugar or cooked without sugar and then topped with sugar, cinnamon, Ovaltine or other sweet toppings. A dollop of butter is also often added. This dish is called Grießkoch in Austria, Grießbrei in Germany, and semolina pudding in English. Grießbrei or Grießkoch can also be mixed with whipped egg whites and sometimes fruits or nuts and baked in the oven, and is then called Grießauflauf.

A baked dish containing semolina called migliaccio is present in the Neapolitan tradition in Italy; it is a mixture of ricotta, vanilla and citrus peel, similar to the filling in sfogliatelle, with added semolina flour to obtain a simple, firm cake. Semolina is also called rava or sooji. This is made of refined, granulated whole wheat. It is generally made of a type of wheat called mottai godumai, and it’s ground finely for batters and coarsely when used as the main ingredient. The Spruce Eats has a lot more information if you’re interested in cooking Indian recipes that use semolina. My advice is to always buy exactly the type of flour that your recipe requires! Semolina from Durum Wheat The middlings of durum wheat (aka durum semolina) are used to make pasta and this use of durum semolina is so common that durum semolina is often know as simply 'semolina'. This is the second meaning of the word and the one commonly used by the general population.

Where Can You Buy Semolina Flour?

Depending on the variety of hard wheat used, the resulting semolina can be different in terms of protein and starch content. Regardless, you shouldn’t substitute it for all-purpose flour in your baking.
