Dark chocolate uses between 70 - 99 per cent cocoa solids. It is much less sweet than milk chocolate. The scientific word for the tree that cocoa beans grow on is Theobroma cacao, which means ‘food of the gods’. This is the same as about 3 bars a week, or 156 bars every year!

Melt the chocolate in a double boiler (a metal or glass bowl set over a saucepan with about an inch of boiling/simmering water—make sure the bottom of the bowl doesn't touch the water). This is particularly true of dark chocolate; the higher the cocoa solid content, the higher the benefits. So if you want to eat chocolate, consider swapping milk or white chocolate for dark chocolate next time you have a craving!
