The ceramic in the plates is an excellent heat conductor, so the plates heat and you do not have to flip or rotate the food. Problem was, when I got it to the grill I didn’t have a way to transfer the forms without the meat falling out of the bottom. The nonstick coating kept food from sticking and the innovative lever at the back of the Evolve that allowed it to either stay completely horizontal (for baking) or tilt slightly forward (for grilling) had any extra fat or grease running right off into the drip tray. The design allows the top plate to lock open for grilling with variable temperature control and Quartez heating technology that gives you quick intense heat when you need it.When you are done cooking, let the plates cool slightly and remove the plates and wash them or put them in the dishwasher for easy cleanup. It comes with a pair of non stick grilling plates which are angled to allow fats and juices to run off and which are caught in the trough that you place at the front of the machine. Love it, the plates are a little flimsy, however I love the fact that you can put them in the dishwasher, my last George Foreman did not have this feature and it was a little smaller. Both the top and bottom were charred to a crisp and there was sauce oozing into pretty much everywhere but the drip tray in the front.
