And given the large amount of egg whites required to make friands, this recipe is a great way to use up any frozen egg whites you might have stashed away in the freezer. I don’t think you need to restrict their use to just friands – I used to make muffins in these tins. I’m not sure if it’s supposed to be dense or the supposed to be Aerie almost like angel food but a little more dense.
