Who decides what’s a San Marzano tomato and what isn’t? The San Marzano tomato is DOP-certified, an official government designation that codifies the traditional methods and foods that represent the best of Italian cuisine. (Other famous DOP foods are parmigiano Reggiano, prosciutto di Parma, and aceto balsamico di Modena.) The DOP requirements are determined by a local governing body, the Consorzio di Tutela del Pomodoro San Marzano dell'Agro Sarnese-Nocerino, and set into law by the European Union. San Marzano tomatoes are prized for their balanced flavor and distinct tomato-iness. Yet as home cooks become more and more enchanted with the Italian variety, questions arise over what exactly is in that can with the San Marzano label. San Marzano is a type of plum tomato. Their shape, flavour and texture is what sets them aside from other tomato varieties, and they are a staple in kitchens across the world. The sweet flavour of these tomatoes make them a great addition to pasta and pizza sauces.

Canned San Marzano Tomatoes - Look for the DOP designation on the can so that you know you’re getting the real deal. The label should read “Pomodoro San Marzano dell’Agro Sarnese- Nocerino DOP” or “San Marzano Tomatoes from Agro Sarnese-Nocerino DOP”. This indicates the exact region in Italy where they are grown. But unlike San Marzanos and Piennolos, Il Miraclos have no special designation. They’re produced by just one guy, Sabatino Abagnale. These tomatoes have a huge reputation and boast a Protected Designation of Origin status (DOP, or sometimes written as PDO - Denominazione d'Origine Protetta) which specifies the precise cultivar, processing method and region in which the tomatoes can be grown.
